.mushroom soup


serves one.

Ingredients:
– approx. 1 cup button mushrooms, chopped
– 1.5 tablespoon butter
– 4 - 5 slices of cheese
– 200ml water

– 1 tablespoon corn flour + 4 tablespoon room-temperature water, mixed in a small bowl


Method:
– melt butter in sauce pan and saute mushroom slices until soft.
– add in 200ml water, followed by cheese slices when water comes to a gentle boil. Mix well.
– add corn flour + water into soup and stir at the same time, until soup thickens.
– serve hot, with garlic bread (optional).


Note: Add chicken salt if you reckon it's too plain.

Cheezy Spirals

Cheezy Spirals... by Me!

The other night, a couple of months ago, I had to prepare my lunchbox for the next day... And so I checked my fridge and food cabinet to see if there are any ingredients for me to get rid of before they go rotten.

Tomatoes... Half onion... Half avocado... Oh, and that last bit of bacon in the freezer!

So I thought I'd try to make something out of random ingredients.. And it turned out so good (not weird at all, I promise!) .. It's so good that SF claimed it's "his favorite food" now, and trust me, his food standard is very, very high.


Ingredients:
– Half tomato, cubed
– Half avocado (optional), cubed
– 1 strip bacon (or a little more if you love bacon), cut into pieces
– 1/4 onion, chopped into slices
– 2 1/2 cups rotini (spiral pasta)
– 3 tablespoon Cheese (those that you'd use for pizza topping)
– 1 teaspoon oil
– Water


Seasoning:
– Mayonaise (preferably Japanese style)


Method:
– Fill sauce pan with water and add in the oil.
– Add rotini when water boils.
– Drain rotini, put aside.
– Place bacon in (the same) sauce pan and sauté in medium fire until cooked.
– Add in tomato, avocado and onions and switch to low fire. Sauté for a minute.
– Add in pasta, followed by cheese. Mix everything well.
– Serve hot (or at room temperature) with mayonaise.


This recipe is pretty economical and quick to make if you have to rush for 8 assignments in the next few weeks!

Butter Muffins/Cup Cakes


Primary tools that you'll need:
– Medium or large mixing bowl.
– Large wooden spoon (for mixing).
– 12 hole (1/3 cup) muffin tray. (you will have to alter bake time if tray is of different size)
– Muffin/cup cake paper.


Ingredients:
– 180g butter
– 1/2 cup (125ml) caster sugar
– A little less than 1/2 cup self-raising flour.
– 3/4 cup plain flour.
– 1 teaspoon vanilla essence
– 1/4 teaspoon bi-carb soda
– 1/2 cup milk
– 3 eggs


Instructions:
1. Preheat oven to 170ºC (338ºF). Place muffin paper in tray.
2. Mix all ingredients in bowl with wooden spoon. DO NOT use electric mixer.
3. Fill muffin tray with mix (about half full on each ones).
4. Bake for about 25 minutes.
5. Place muffin/cup cake on wire rack to cool.


Optional: Serve with icing sugar.

Milk Tea


Serves 1

Ingredients
– 1x Dilmah or Lipton Ceylon Tea bag
– 2 teaspoon sugar
– 2 teaspoon condense milk
– Arnott's TimTam (original)
– Hot water


Method
– Place tea bag in a cup (approximately 250ml). Add hot water.
– Add sugar in and stir.
– Add condense milk in and stir.
– Serve hot with TimTam!


Note: If you're not a huge fan of sweet milk tea just add 1 teaspoon of sugar rather than 2.

Thai Coconut rice

Ingredients:
- 2.5 cups rice
- 1 cup (250ml) coconut milk
- 50ml water
- 4 teaspoon sugar
- Lime leaves (cut into smaller pieces)


Method:
- Place rice in rice cooker pot and wash them.
- Add coconut milk and water, followed by sugar and lime leaves.
- Stir, cover rice pot.. And then cook.
- When rice is cooked, do not remove cover for about 5 - 10 minutes.
- Serve hot (with Thai green or red curry)!

Nutella Muffins

Nutella muffin.

IMPORTANT: Use a 12-cup, 80ml muffin tray.

Ingredients


- 2 cups self-raising flour
- 1/2 cup caster sugar
- 3/4 cup milk chocolate chips (Nestlé)
- 1/3 cup cocoa powder (Nestlé)
- 1/2 cup pistachios (chopped coarsely)
- 60g melted butter
- 3/4 cup Nutella
- 1/3 cup milk
- 1 egg, lightly beaten
- 200ml light sour cream


Method

- Preheat oven at 200ºC.

- Add in dry ingredients.

- Stir in all other ingredients.

- Place muffin cups in muffin tray and fill mixture (about 1/2 - 3/4 full each).

- Bake for 25 minutes.

- Place cooked muffins onto wire rack to cool.

- Store in an air tight container/ziplock bag in fridge for up to 5 days.


*Note: I kind of forgotten to add in an egg the last time I bake and it tasted just as good. :)

Easy-to-Make Butter Cookies

Butter cookies. Makes approximately 75

Tools:
- Electric mixer
- Large mixing bowl
- Measuring cups: 1/2 (125ml) or 1 cup (250ml)
- Sieve (for the flour)
- Spoon (for scooping up the butter from container)
- Baking paper


Ingredients:
- 1 cup butter [2 teaspoon more if you like buttery butter cookies]
- 1 cup caster sugar [or 1/4 less if you are not a sweet tooth]
- 3 cups flour
- 2 eggs


Method:
1. Preheat oven to 190ºC (374ºF).
1. Beat butter with electric mixer on a large mixing bowl.
2. Place caster sugar in and mix until dissolved. At this point the mix should appear fluffy.
3. Crack eggs into the mix and beat thoroughly.
4. Sift flour into the mix. Beat until flour dissolves into mix.
5. Roll up mix into a whole block. Place in refrigerator for 10 minutes.

6. Place baking paper on tray. Feel free to shape it in anyway you like but keep the thickness to a minimum of 0.5cm and maximum of 1cm.
7. Bake for 10-15 minutes. Cool on wire rack. Repeat step 7 for 1-2 times.

Baked Meat Balls

Baked meat balls.

Serves 4


Total Preparation and Cooking Time: 5-7 hours, including marinating.


Ingredients

- 350g Pork Mince (beef or veal may also be used)
- 1 tablespoon Sesame Oil
- Lots and lots of non-sugar-coated crackers, crushed finely
- 8 cloves Garlic, chopped finely
- 2 Eggs
- 1 tablespoon Soy Sauce
- Salt


Optional

- Spring Onions (shallots)


Method

- Mix all ingredients in large mixing bowl. Spread plastic wrap on bowl and marinate in refrigerator for at least 3 hours.

- Preheat oven to about 180ºC. Spread baking paper on baking tray.

- Shape mixture into individual bite-size meat balls and place on tray, leaving about 1cm in between.

- Bake for about 20-30 minutes, or until cooked.



Comment: This goes really well with ketchup. Feel free to try out any other dipping sauces if desired!

Fried Rice

Serves 2

Ingredients

- 1.5 cup Jasmine rice, cooked and left overnight (or at least an hour in the refrigerator)
- 1/2 can of SPAM Lite, chopped into small cubes
- 2 large eggs, beaten.
- 3/4 cup Chicken stock
- Spring Onions (shallots)
- Dark Soy Sauce
- Pepper
- Sambal, for serving


Method

- Place cubes of SPAM in large frying pan and fry for about 8 minutes. Pour onto medium plate/bowl.
- Add eggs into frying pan and scramble until cooked. Pour onto plate/bowl containing the cubes of SPAM.
- Pour cooked Jasmine rice into frying pan and add half of the 3/4 cup chicken stock. At this point, the rice would have been hardened from the cold temperature of the fridge. Add cubed SPAM and eggs in.
- Fry until rice softens. Add remaining chicken stock and a dash of dark soy sauce. Pour in spring onions (shallots) and pepper (any amount) and cook for about 5 minutes.
- Serve on plate with sambal.


Comments: We have cut down the amount of oil originally used.. But we can guarantee the perfect taste of this dish!

Porridge (Eastern Style)

The best porridge recipe!

Serves 2.


Total Preparation and Cooking Time: 5 hours.

Ingredients

- 3/4 cup Jasmine Rice, rinsed.
- 3 tablespoons Dried Scallops
- Sesame Oil
- Salt
- 1/2 cup Spring Onions (shallots), chopped.


Note: _pdra also recommends eating the porridge with pepper and soy sauce.


Method

- Soak dried scallops in small bowl with luke warm water for 3 hours.
- Mash dried scallops into small pieces with hands. DO NOT POUR WATER AWAY.
- Place rice on medium-large sauce pan, add 1 tablespoon of Sesame Oil and salt (any amount, but try not to over-add) and rub with hands. Leave (covered with lid) for 10 minutes.
- Pour dried scallops (+ the bowl of water) into porridge and add water (covers 3/4 of the sauce pan). Bring to boil.
- Lower the fire and cook for 2 hours, stirring every 30 minutes. Add more salt/water to adjust.
- Serve porridge in medium bowl with spring onions.

Doublo-Triplo Choc Chip Cookies

Cadbury Dark chocolate chips - Highly recommended.



Ingredients

- 125g (approx) butter (@ room temperature)
- 1 teaspoon vanilla extract

- 1 large egg (
@ room temperature)
- 2/3 cup brown sugar

- ¼ cup self-raising flour
- 1 cup plain flour (or whole meal flour)
- 2 tablespoon cocoa powder

- 1 whole bag of Cadbury (
ONLY!) chocolate chips
- 1 teaspoon bi-carbonate soda
- 5 tablespoons Nutella
- 3 - 4 tablespoons thickened cream



Method

- Preheat oven at 180ºC.

- Beat butter, extract, sugar, egg in small bowl with electric mixer until smooth - do not overbeat. Stir in sifted dry ingredients and chocolates.

- Place baking paper on oven tray. Drop level teaspoons of mixture (diameter of 3cm) onto tray and flatten them. Allow 1 cm gap between each cookie dough.

- Bake for 12 minutes. Transfer cookies (using a pair of tongs) onto wire rack to cool.

- Store cookies in air-tight container - best consume within a few days. Add 1 teaspoon Nutella on top of cookies before serving, if desired.

Home-made mashed potatoes

_pdra's trademark mashed potatoes.

1 serving

Ingredients:
- 2 - 3 small potatoes
- Butter
- Hot full cream milk

- Salt + Pepper

- Chicken Salt



Method:
- Boil potatoes on small sauce pan until very tender.
- Drain water. Mash potatoes with spoon.

- Place potatoes in sauce pan on low fire. Stir and add milk (gradually).

- Add butter (approx. 1 tablespoon), salt and pepper. Mix thoroughly.

- Place mashed potatoes onto small bowl and add chicken salt to taste.

home-made pizza

Home-made Pizza!

Serves 2-3.


ngredients:

- Instant pizza base with layer of sauce (can be found in most major super markets)
- 50g cubed bacon bits
- 1 chicken kebab stick (BBQ flavor recommended)
- 1/2 onion
- Mozzarella cheese (about 1/2 packet)
- BBQ sauce
- 6 medium-large size pieces of Salami (any flavors)


Methods:

- Preheat (fan-forced or conventional) oven at about 180ºC.
- Place salami around pizza base and sprinkle cubed bacon bits as well.
- Remove chicken from kebab stick and cut into bite size pieces. Place around pizza base.
- Cut onion up (into rings) and place around pizza base.
- Add as much barbeque sauce as you like!
- Sprinkle cheese evenly around pizza. Bring into oven and leave it in for about 15-20 minutes.

- Divide with pizza cutter.
