Baked Meat Balls

Baked meat balls.

Serves 4


Total Preparation and Cooking Time: 5-7 hours, including marinating.


Ingredients

- 350g Pork Mince (beef or veal may also be used)
- 1 tablespoon Sesame Oil
- Lots and lots of non-sugar-coated crackers, crushed finely
- 8 cloves Garlic, chopped finely
- 2 Eggs
- 1 tablespoon Soy Sauce
- Salt


Optional

- Spring Onions (shallots)


Method

- Mix all ingredients in large mixing bowl. Spread plastic wrap on bowl and marinate in refrigerator for at least 3 hours.

- Preheat oven to about 180ºC. Spread baking paper on baking tray.

- Shape mixture into individual bite-size meat balls and place on tray, leaving about 1cm in between.

- Bake for about 20-30 minutes, or until cooked.



Comment: This goes really well with ketchup. Feel free to try out any other dipping sauces if desired!

Fried Rice

Serves 2

Ingredients

- 1.5 cup Jasmine rice, cooked and left overnight (or at least an hour in the refrigerator)
- 1/2 can of SPAM Lite, chopped into small cubes
- 2 large eggs, beaten.
- 3/4 cup Chicken stock
- Spring Onions (shallots)
- Dark Soy Sauce
- Pepper
- Sambal, for serving


Method

- Place cubes of SPAM in large frying pan and fry for about 8 minutes. Pour onto medium plate/bowl.
- Add eggs into frying pan and scramble until cooked. Pour onto plate/bowl containing the cubes of SPAM.
- Pour cooked Jasmine rice into frying pan and add half of the 3/4 cup chicken stock. At this point, the rice would have been hardened from the cold temperature of the fridge. Add cubed SPAM and eggs in.
- Fry until rice softens. Add remaining chicken stock and a dash of dark soy sauce. Pour in spring onions (shallots) and pepper (any amount) and cook for about 5 minutes.
- Serve on plate with sambal.


Comments: We have cut down the amount of oil originally used.. But we can guarantee the perfect taste of this dish!

Porridge (Eastern Style)

The best porridge recipe!

Serves 2.


Total Preparation and Cooking Time: 5 hours.

Ingredients

- 3/4 cup Jasmine Rice, rinsed.
- 3 tablespoons Dried Scallops
- Sesame Oil
- Salt
- 1/2 cup Spring Onions (shallots), chopped.


Note: _pdra also recommends eating the porridge with pepper and soy sauce.


Method

- Soak dried scallops in small bowl with luke warm water for 3 hours.
- Mash dried scallops into small pieces with hands. DO NOT POUR WATER AWAY.
- Place rice on medium-large sauce pan, add 1 tablespoon of Sesame Oil and salt (any amount, but try not to over-add) and rub with hands. Leave (covered with lid) for 10 minutes.
- Pour dried scallops (+ the bowl of water) into porridge and add water (covers 3/4 of the sauce pan). Bring to boil.
- Lower the fire and cook for 2 hours, stirring every 30 minutes. Add more salt/water to adjust.
- Serve porridge in medium bowl with spring onions.

Doublo-Triplo Choc Chip Cookies

Cadbury Dark chocolate chips - Highly recommended.



Ingredients

- 125g (approx) butter (@ room temperature)
- 1 teaspoon vanilla extract

- 1 large egg (
@ room temperature)
- 2/3 cup brown sugar

- ¼ cup self-raising flour
- 1 cup plain flour (or whole meal flour)
- 2 tablespoon cocoa powder

- 1 whole bag of Cadbury (
ONLY!) chocolate chips
- 1 teaspoon bi-carbonate soda
- 5 tablespoons Nutella
- 3 - 4 tablespoons thickened cream



Method

- Preheat oven at 180ºC.

- Beat butter, extract, sugar, egg in small bowl with electric mixer until smooth - do not overbeat. Stir in sifted dry ingredients and chocolates.

- Place baking paper on oven tray. Drop level teaspoons of mixture (diameter of 3cm) onto tray and flatten them. Allow 1 cm gap between each cookie dough.

- Bake for 12 minutes. Transfer cookies (using a pair of tongs) onto wire rack to cool.

- Store cookies in air-tight container - best consume within a few days. Add 1 teaspoon Nutella on top of cookies before serving, if desired.

Home-made mashed potatoes

_pdra's trademark mashed potatoes.

1 serving

Ingredients:
- 2 - 3 small potatoes
- Butter
- Hot full cream milk

- Salt + Pepper

- Chicken Salt



Method:
- Boil potatoes on small sauce pan until very tender.
- Drain water. Mash potatoes with spoon.

- Place potatoes in sauce pan on low fire. Stir and add milk (gradually).

- Add butter (approx. 1 tablespoon), salt and pepper. Mix thoroughly.

- Place mashed potatoes onto small bowl and add chicken salt to taste.

home-made pizza

Home-made Pizza!

Serves 2-3.


ngredients:

- Instant pizza base with layer of sauce (can be found in most major super markets)
- 50g cubed bacon bits
- 1 chicken kebab stick (BBQ flavor recommended)
- 1/2 onion
- Mozzarella cheese (about 1/2 packet)
- BBQ sauce
- 6 medium-large size pieces of Salami (any flavors)


Methods:

- Preheat (fan-forced or conventional) oven at about 180ºC.
- Place salami around pizza base and sprinkle cubed bacon bits as well.
- Remove chicken from kebab stick and cut into bite size pieces. Place around pizza base.
- Cut onion up (into rings) and place around pizza base.
- Add as much barbeque sauce as you like!
- Sprinkle cheese evenly around pizza. Bring into oven and leave it in for about 15-20 minutes.

- Divide with pizza cutter.
